Easy Kinder Bueno Cupcake Recipe

Lately I’ve started to revisit my love for baking and I have to say, I am LOVING it. Back in the day I actually used to subscribe to a Disney Baking Magazine (LOL), so it’s safe to say I have my fair share of moulds, cutters and baking tools that I need to put to use. To kick things off, here's a quick and tasty Kinder Bueno inspired cupcake recipe...

Kinder Bueno Cupcake Recipe

For the cupcakes:

175g of unsalted butter
175g soft light brown sugar
3 large eggs
140g self-raising flour
35g cocoa powder

For the buttercream:

150g softened unsalted butter
300g icing sugar
100g of Kinder chocolate
Chocolate sprinkles (any kind)
Kinder Chocolate Bars

Cake bases

1) Preheat your oven to 170C/160C fan and place paper cupcake cases into a 12-hole baking tray.

2) Using an electric whisk, cream together the butter and soft brown sugar until the mixture is smooth. (It’s best to soften the butter beforehand).

3) Slowly add in the eggs (being careful not to curdle the mixture), self-raising flour and cocoa powder and whisk again until everything is combined.

4) Scoop the mixture evenly into the 12 cupcake cases and cook for 20-25 mins. Once done, leave to cool before you start on the next step.

Buttercream

5) In a microwavable bowl, slowly melt the kinder chocolate in the microwave. It’s best to do this in short 15 second intervals, stirring in between until melted. Once melted, set the bowl to one side to cool.

6) In a different bowl, beat 150g of butter until smooth before adding the icing sugar, 100g at a time until it is all combined. Then add the melted kinder chocolate and whisk again until smooth and fluffy. (Careful not to mix this too much, as the mixture needs to remain cool.)

Now you’re ready to decorate! You can do this however you like, I always like to use piping bags with my cupcakes - I think it looks more professional. Annoyingly, my piping bag broke half way through trying to do this... so instead I slathered butter cream on each cupcake with a tea spoon and then used a mix between milk chocolate and white Kinder bars, along with sprinkles to decorate. VoilĂ ! 

This is a pretty easy recipe to follow and it tastes amazing (maybe a little too sweet for me), but it certainly got the boyfriends seal off approval.
